When YOU magazine asked National Tea Day to assist with tea pairing advice for chocolate cakes Diaz Ayub our resident tea pairing expert was of course the man we turned to. The article provided a brief snapshot into why Diaz paired the different combinations together.

Salt caramel chocolate victoria sponge

A light chocolate layer cake made with buttermilk, with a hint of coffee in the cake mix and a creamy salt caramel filling/frosting.

Tea Paired with:Pure Green Tea

Tasting notes:

The earthy tones of the tea cut through the salt and rich caramel flavours. This is a guilt free but indulgent pairing. The salt caramel chocolate Victoria sponge provides the naughty and the Clipper green tea provides the guilt free.

With such an abundance of flavours going on in the cake it is important to pair it with a tea powerful enough to balance these flavours yet subtle enough to not overtake them. The sharp tones of the green tea enhance the salt and rich caramel flavours of the Victoria Sponge for a perfect balance.

The chilli and ginger would overpower other teas but in this instance the strong smoky sensations of this particular tea stand up well for a bold combination which will tantalise even the most experience palate.

A classic smoky, spicy and sweet combination which is a must try.

The malty notes of the tea intensify the sweetness of the honey and pecans with citrus overtones. A classic combination with lots of sweetness coming through we recommend you won’t need sugar in your cuppa when trying this one!

Classic choc-chip muffin-cupcakes

Gluten-free chocolate cupcakes including dark and milk chocolate chips topped with a dark chocolate truffle frosting.

Tasting notes:

With so much chocolate in this cake it was vital we paired it with something which was able to cleanse the palate afterwards and here we have found just that combination.

We recommend you bite the cupcake first and get a full mouth of the intense dark and milk chocolate along with the truffle frosting before washing it all down with the Mountain Mint.

Mountain Mint is unique as it provides a warming rather than a cooling sensation meaning this become a rich, fresh and warming combination!
